Guacamole Recipe
This Guacamole recipe is one of the gems from my family cookbook. This Guacamole, when served as a Side Dish will always bring cheer to your table. It is always prepared with Fruits as the most essential ingredient. The first taste of this delightful Guacamole from the Mexican cuisine is enough to addict you to it for life! Just try this dish and see how you get hooked to it!
Ingredients
2 t agar-agar flakes or gelatin
2 c cold water
1 t tamari
2 t butter
1/4 onion, chopped
2 t curry powder
Dash cayenne
1/2 c honey
2 c yogurt
2 c ripe avocados, mashed
2 t lime or lemon juice
Directions
Saute onions in butter.
Add curry powder.
Combine tamari, honey, gelatin, water, and juice in a saucepan and cook until gelatin dissolves.
Remove from heat.
Add onions.
With a rotary beater, beat in yogurt and avocados; blend until smooth.
Turn mixture into a 1-1/2 quart mold.
Chill for several hours.
Unmold and garnish with red peppers and cherry tomatoes.
This is a good dish to serve with leftover slices of cold roast lamb, pork, turkey, or chicken.
