1. In a mortar, add in 1 tablespoon chopped onion, the Serrano chilies, ½ teaspoon cilantro and salt. Mash with the pestle until it is a juicy paste.
2. Slice the avocado in half, remove the pit and score the avocado into little squares and scoop it out into the bowl and coat with the paste.
3. Add in the tomatoes, remaining onion, cilantro, and fold to incorporate all ingredients. Add more chopped Serrano chilies and salt to taste.
4. Serve guacamole with tortilla chips.
