Groundnut Stew Recipe
The Groundnut Stew has given chicken, my favorite edible, a new identity. Tired of regular chicken dishes, I tried this African wonder with rice and with mashed yams for lunch and found it extrarodinary! Try out the Groundnut Stew and don't forget to tell me how you've enjoed the dish!
Ingredients

| 1 pound beef cubes, 1-inch size | ||
| Peanut oil | 2 Tablespoon | |
| Salt | 1 Teaspoon | |
| Onions | 1 Cup (16 tbs), chopped | |
| Green pepper | 1 , chopped | |
| Tomatoes | 2 Large, peeled | |
| Cayenne | 1 1/2 Teaspoon | |
| Water | 2 Cup (16 tbs) | |
| Peanut butter | 1 1/2 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
This is an African dish that goes well with rice or mashed yams.
Season chicken with salt and pepper, set aside.
Brown the beef cubes in hot oil in large skillet.
Add salt, 1/2 of the onions, 1/2 of the pepper and tomatoes, cayenne, and water.
Simmer this gently 30 minutes.
Mix 1 cup cooking liquid with peanut butter to make a smooth paste.
Add to skillet, cook for 15 minutes more.
Add chicken pieces and remainder of vegetables.
Simmer for 30 minutes more, until all is tender.
Season chicken with salt and pepper, set aside.
