Ingredients

 
1 1/2 pounds finely ground lamb
 
1/2 teaspoon thyme leaves
 
1 teaspoon salt
 
1/4 to 1/2 teaspoon pepper, to taste
 
2 tablespoons finely minced garlic
 
1/3 cup minced onion
 
2 eggs, lightly beaten
 
1 cup loosely packed minced fresh parsley
 
1/4 cup olive oil

Directions

Combine all ingredients except olive oil in a medium-sized bowl.
Work together well.
Shape meat mixture into 24 cigar or elongated egg shapes, each containing 1 ounce (2 tablespoons) meat.
Thread kebabs lengthwise onto slender greased skewers.
Refrigerate until ready to grill.
Baste with olive oil and grill 12 to 15 minutes for medium to well done.
