1 pound lean ground beef
 
1 or 2 tablespoons salad oil
 
1 medium-sized onion, chopped
 
1/2 cup canned Mexican red chile sauce or enchilada sauce
 
8 corn tortillas
 
Salad oil for deep frying
 
2 to 3 cups shredded lettuce
 
1 cup shredded mild Cheddar or jack cheese
 
Canned or bottled taco sauce

Directions

In a frying pan, break apart and brown the meat, adding oil if necessary.
Add onion and cook until soft.
Add sauce and simmer slowly about 10 minutes, stirring constantly until liquid has evaporated.
Keep warm, or reheat.
Fry one tortilla at a time in about 1/2-inch of hot oil (365°), until it becomes soft (just a few seconds).
Then fold it in half and hold slightly open with tongs or two forks so that there is a space between the halves for filling to be added later.
Fry the tortilla until crisp and light brown, turning as necessary to cook all sides.
The process takes about 1 minute only.
Drain on paper towels.
Fill each tortilla with meat sauce, lettuce, and cheese; top with sauce.
