Ground Beef Filled Fresh Squash Recipe
Ingredients
| Acorn squash | 3 | |
| Ground beef | 1 Pound | |
| Herb | 1/2 Cup (16 tbs), seasoned | |
| Minced parsley | 1 Tablespoon | |
| Onion | 2 Tablespoon, minced | |
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| 3/4 c. beef bouillon | ||
| Mushrooms | 1/2 Cup (16 tbs), sliced | |
| Butter | ||
Directions
Cut the squash in half lengthwise and remove the seeds.
Place, cut side down, in baking pan, then add 1/4 inch boiling water to pan.
Bake at 350 degrees for 30 minutes or until almost tender.
Saute the ground beef until crumbly.
Add the stuffing mix, parsley, onion, salt, pepper and bouillon, then toss lightly to combine.
Turn the squash, cut side up, then fill with the beef mixture.
Return to the oven and bake for 20 to 30 minutes longer.
Saute the mushrooms in butter, then arrange over stuffed squash.
