Ingredients
1 (10-ounce) package frozen chopped spinach
1/4 cup sliced green onions
1/4 teaspoon ground white pepper teaspoon ground nutmeg
1/2 cups water
1/4 teaspoon salt
3/4 cup quick-cooking grits, uncooked
1/2 cup plain nonfat yogurt
Directions
Cook chopped spinach according to package directions, omitting salt and adding onions.
Drain well, stir in pepper and nutmeg.
Set aside.
Combine water and salt in a medium saucepan,- bring to a boil.
Stir in grits.
Cover, reduce heat, and simmer for 5 minutes or until thickened.
Sttir in reserved spinach mixture and yogurt.
Continue cooking untilthoroughly heated.
Drain well, stir in pepper and nutmeg.
