Grilled Lobster Tails Recipe Video

GETTING READY
1. To prepare grilled lobster, begin by splitting the lobster tails in half with a sharp knife.
2. To do this, lay the lobster tail on its back.
3. With your knife, set it on the tip of tail.
4. Push knife down into meat and crack through the back of the shell.
5. Gently pull meat apart from the shell, but not completely.
6. Rinse lobster under cool water. Pat dry.
7. Drizzle chive oil or olive oil over the lobster tails.
8. Cover and put in the refrigerator in 30 minutes.

MAKING
9. To grill lobster, preheat your outdoor gas grill.
10. Grill lobster tails, meat side down, on the grill and cover about 1 minute.
11. Turn lobster over on the back side and grill another minute.
12. Remove lobsters tails on the grill when lobster is still pink.
13. Next, preheat a saute pan large enough for both tails over medium heat.
14. Add 1/2 stick butter and 1 teaspoon garlic shallot puree.
15. When butter is melted, add 1/4 cup water and let it sizzle around.
16. Add lobster tail keeping it at top of the pan. You’ll see the butter is over the flame.
17. Start to spoon the hot butter mixture over the lobster.
18. Keep lobster up and away from the heat. The hot butter is what will cook the meat to completion.
19. After couple minutes, add chopped parsley.
20. Add a bit more water if needed. After about 5 minutes, they will be done.

SERVING
21. Serve with garlic mashed potatoes and fresh grilled corn on the cob.
