Grilled Whole Fish Recipe
Ingredients
1 whole fish
2 scallions, minced
2 slices gingerroot, minced
1/2 teaspoon sugar
1/2 teaspoon salt
1 tablespoon soy sauce
1 tablespoon sake or dry sherry
1 tablespoon peanut oil or sesame oil

Directions
Have the fish cleaned and scaled.
Remove the fins but leave the head and tail intact.
Score the fish on both sides—to the bone but not through it—with 2 or 3 parallel diagonal slashes.
This allows heat and seasonings to penetrate and prevents curling.
Combine the scallions, gingerroot, sugar, salt, soy, sake and oil.
Rub the fish inside and out with this mixture.
Allow to stand 30 minutes.
Oil the grill and heat it over the coals.
This will help prevent the fish from sticking.
