6 frozen South African rock lobster tails, thawed
 
3/4 cup pineapple juice
 
1/2 cup packed brown sugar
 
1/4 cup cider vinegar
 
2 1/2 teaspoons dry mustard

Directions

Cut underside membrane of lobster tails around edges and remove.
Insert skewers length wise through meat to keep tails flat during cooking.
Place on grill about 4 inches from coals, flesh side down, 3 to 5 minutes.
Turn, brush meat with a mixture of pineapple juice and remaining ingredients, and continue grilling until meat is opaque and tender.
Brush meat several times during cooking and just before serving.
