Grilled Pork With Barbecued Table Mop Recipe

Ingredients
1 lb. pork tenderloin
1 T salt
1/2 T black pepper
8 oz. low sodium tomato sauce
2 T prepared mustard
1/2 T Tabasco sauce
1 T brown sugar
1 clove garlic, finely minced
1 small onion, finely chopped nonfat cooking spray
Directions
Remove any visible fat from the pork and dust the tenderloin with the salt and pepper.
In a small saucepan, combine the tomato sauce, mustard, Tabasco, brown sugar, garlic and onion and simmer for 20 minutes.
Do not boil.
Coat the grill with cooking spray and preheat for 5 minutes.
Grill the tenderloin for 2 minutes.
Generously "mop" the pork with the sauce.
Continue grilling for 2-4 minutes.
Watch the drip tray carefully, as the sauce will melt and run into the tray.
To serve, slice thinly across the grain of the meat, heap pork slices on individual plates and cover with additional warm barbeque sauce.
