Grill any white fish as in the preceding recipe.
Just before serving, fry four or five cloves of garlic in olive oil with two or more pieces of hot chili pepper.
(If hot peppers are not available, substitute powdered cayenne, adding it only when the garlic cloves are browned.) Open the fish and strain the hot oil over it.
