Ingredients
4 chicken breast (marinated in mojo)
1 large mango, peeled, seeded, diced
1/2 papaya, peeled, seeded, diced
1/2 red onion, diced
1/2 jalapeno, seeded. minced
1/2 cup chooped fresh cilantro
1/4 cup lime juice
Mojo:
2 cup orange juice
1 cup lime juice
4-6 garlic cloves
1 medium red onion
1 jalapeno
1 cup fresh cilantro
salt & pepper to taste
Directions
Place all Mojo ingredients in a blender till liquefied. Place chicken breast in a resealable plastic bag and add marinate. Refrigerate for minimum 1-hour.
Grill the Mojo marinated chicken breast 3-4 minutes per side, till internal temperature is 160*F.
In a bowl mix together all other ingredients. Once chiken is cooked, spoon a nice amount of salsa over each chicken breast.
Serve with your favorite sides.
