Ingredients
1/4 cup currant jelly
1/4 cup dry sherry
1/4 cup soy sauce
1 large clove garlic, peeled and crushed
1/2 teaspoon ground ginger
10-12 ounces boneless skinless turkey breast, cut into 1 inch cubes
18 small (about 4 to 5-inch) bamboo skewers, soaked in water
Directions
In a small saucepan combine the jelly, sherry, soy sauce, garlic, and ginger and bring the mixture to a boil over high heat.
Reduce the heat and cook just until the jelly is melted, about 2 minutes.
Set aside to cool for 10 minutes.
Place the turkey cubes in a flat dish.
Pour the marinade over them and toss.
Cover and refrigerate the dish for at least 4 hours, turning once or twice.
The turkey can be left in the marinade for a day or two.
Lift the cubes from the marinade, blot dry on paper towels, and place each cube on a skewer.
Adjust the grate of your barbecue to about 4 inches from the heat.
When the charcoal is hot, place the cubes on the grill, and cook them for about 4 to 5 minutes on one side, turn them, and cook them for about 4 minutes longer on the second side.
They should be nicely browned and cooked through.
