Ingredients

 
1 lb Mahi Mahi (cut into bite sized pieces)
 
For the Marinade:
 
1 tbsp lemon zest
 
2 tsp dry herbs (you can even use fresh herbs of your choice to suit your individual palette)
 
2 cloves garlic (finely chopped or minced)
 
2 tbsp lemon juice
 
2-3 tbsp olive oil
 
1 tsp white vinegar(optional)
 
1 tbsp finely chopped parsley
 
Salt to taste
 
½ tsp crushed pepper

Directions

Mix all the ingredients of the marinade together in a bowl. Add in the pieces of mahi mahi. Mix well. Cover and refrigerate for approximately two hours. Heat the grill, spray on some olive oil and add the pieces of the fish. Grill for approximately 3-5 on each side. Serve.
