Grilled John Dory Recipe

(Maximum weight of fish about 1 lb.) Make some cuts in the skin of the John Dory, or other suitable fish, and let it stand and soak in olive oil mixed with salt, pepper and chopped herbs for 30 minutes, turning the fish several times during this period.
Grill under moderate heat for 15 minutes each side, 30 minutes altogether, constantly basting the fish as you do so with the oil in which you soaked it.
Serve with one of the following sauces: maitre-d'hdtel with lemon, tartar sauce, white or green hollan-daise sauce, hot or cold green sauce, hot or cold ravigote sauce, shrimp sauce, or caper sauce.
