Grilled Grouper Recipe

Ingredients
1 teaspoon Creole seasoning
1 teaspoon dried whole basil
1 teaspoon dried whole oregano
1/2 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
6 grouper or redfish fillets (about 2 pounds)
1/2 cup dry white wine
1/4 cup olive oil
12 slices bacon, partially cooked
Vegetable cooking spray
Directions
Combine Creole seasoning, basil, oregano, white pepper, garlic powder, and Italian seasoning in a small mixing bowl, mix well.
Divide mixture in half, set half aside.
Sprinkle remaining half on fish fillets.
Place fillets in a shallow baking dish, and pour wine over fillets.
Cover and marinate in refrigerator 12 hours, turning fillets occasionally.
Drain fish fillets, rub both sides of fillets with olive oil, and sprinkle evenly with reserved seasoning mixture.
Wrap 2 slices bacon around each fillet; secure with wooden picks.
Spray a fish basket with cooking spray, place fish in basket.
Grill fish over medium-hot coals 7 to 10 minutes on each side or until fish flakes easily when tested with a fork.

Place fish on serving platter, and serve immediately.
