Grill Roasted Eggplant Recipe Video

Ingredients

 
1 big eggplant
 
3-4 cloves garlic
 
1 tsp oil
 
salt( to taste)

Directions

1) Roast/grill an eggplant until all of the skin is charred and the eggplant is soft.
2) Similarly, place a few garlic cloves on an aluminium foil, add the oil and wrap to make a packet. Roast alongwith the eggplant.
3) Let it cool, remove the skin and scoop out eggplant in a bowl.
4) Add the roasted garlic, salt and mix well. Wrap in a foil and put back on grill for a few minutes.
