Grilled Corn Salad Recipe
The grilled corn salad is a fresh and colorful salad that can be served as a side for meals. Made with fresh ears of corn cooked on the grill along with red peppers, the grilled corn salad is has flavors of cilantro, garlic and the heat of chipotle chilies. spicy and tangy, the grilled corn salad has quite a kick to it.
Ingredients
8 ears corn, husked 8
1 red onion 1
2 sweet red peppers 2
1/2 cup chopped fresh cilantro or parsley 125 mL
1/4 cup chopped fresh chives 50 mL or green onions
1/3 cup rice vinegar or cider vinegar 75 mL
1 tbsp orange juice concentrate 15 mL
1 clove garlic, minced 1
11/2 tsp minced chipotle chile 7mL
1 tsp salt 1/2 tsp pepper 5 mL 2mL
2 tbsp olive oil 25 mL
Directions
Barbecue corn directly on grill.
Turn and cook until corn is dotted with brown.
Slice onion into 1/2 inch /1 cm rings and grill on both sides until cooked and browned.
Place peppers on barbecue and grill until blackened on all sides.
Cool, peel and discard ribs and seeds.
Cut ofFniblets by breaking cobs in half and standing cut end on cutting board (page 88).
Cut ofFniblets from top to bottom.
In large bowl, combine corn, onion, red pepper, cilantro and chives.
In small bowl, combine vinegar, orange juice concentrate, garlic, chipotle, salt and pepper.
Whisk in olive oil.
Toss vegetables with dressing.
Taste and adjust seasonings.
