Ingredients
| 1 pound boneless skinless chicken breasts, grilled | ||
| 2 large tomatoes,coarsely chopped | ||
| 1 medium zucchini,halved, thinly sliced | ||
| Whole kernel corn | 1 Cup (16 tbs), frozen | |
| Ripe avocado | 1 , halved | |
| 1/8 cup chopped green onions | ||
| Picante sauce | 1/2 Cup (16 tbs) | |
| Canola oil | 2 Tablespoon | |
| 2 tablespoons chopped cilantro or parsley | ||
| Lemon juice | 1 Tablespoon | |
| Garlic salt | 1/2 Teaspoon | |
| Cumin | 1/2 Teaspoon | |
Directions
Cut the chicken crosswise into bite-size pieces.
Combine the chicken, tomatoes, zucchini, corn, avocado and green onions in a large bowl and toss gently.
Combine the picante sauce, canola oil, cilantro, lemon juice, garlic salt and cumin in a small bowl and blend.
Pour over the chicken mixture.
Stir gently.
Serve on a lettuce-lined platter with additional picante sauce.
