Grilled Chicken Fruit Salad Recipe
Ingredients
| 1 chicken breast half, skinned and boned | ||
| 2 c seedless red grapes, halved | ||
| Celery | 1/2 Cup (16 tbs), chopped | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Walnuts | 2 Tablespoon, finely chopped | |
| 1/2 c nonfat mayonnaise | ||
| Dijon Mustard | 1 Tablespoon | |
| Salt | 1/2 Tablespoon | |
| Black pepper | 1/2 Tablespoon | |
| 1 T lemon juice nonfat cooking spray | ||
Directions
Lightly coat the grill with, cooking spray and preheat for 5 minutes.
Grill the chicken for 5-7 minutes.
Cool and cut into small cubes.
In a large salad bowl, combine the chicken, grapes, celery, onion and walnuts.
Mix together the mayonnaise, mustard, salt, pepper and juice to make a dressing.
Pour over the chicken salad and toss lightly
