Ingredients

 
* Small loaf of Ciabatta bread cut into 1 inch slices
 
* 8 oz. of baby mozzarella balls (about 20), halved
 
* 1 pint of cherry tomatoes, halved
 
* 2 cups of arugula
 
* 3 tbsp of extra virgin olive oil
 
* 2 tsp. of balsamic vinegar
 
* 20 basil leaves, thinly sliced
 
* 1 clove of garlic
 
* Salt and pepper

Directions

1. Combine 2 tbsp of oil and vinegar in a bowl. Season with salt and pepper. Toss in cheese, tomatoes, ½ the basil and arugula.

2. Lightly brush bread with evoo. Grill for 2-3 minutes on each side. Rub each slice with garlic clove

3. Spoon tomato mixture over bread. Finish with salt and pepper and left over basil.
