Grilled Beef And Potato Salad Dijon Recipe

The grilled and potato salad dijon is a beef tseak salad that can be served with greens. The cooked beef roast is tossed with cooked potatoes seasoned with dijon mustard, white wine vinegar and pepper. This bef and potato salad reciepe is a complete meal.

Ingredients

 
3/4 lb. red or all-purpose white potatoes
 
1/4 cup coarse grain or regular Dijon-style mustard
 
2 tbs. vegetable oil
 
1 1/2 tbs. white wine vin-egar
 
1/4 tsp. each salt and coarse grind black pepper
 
3/4 lb. cooked beef roast or steak, cut into 2 x 1 x 1/8 inch thick strips
 
1/2 cup coarsely choppgdie onion
 
2 1/2 tbs. minced parsley salad greens

Directions

Cut potatoes into 1 ihchpjfeces; place in saucepan and cover with cold water.
Bring to a boil, cover and simmer until tender, about 10 -12 minutes.
Meanwhile, combine mustard, oil, vinegar, salt and pepper in lg.bowl.
Drain potatoes.
Add hot.
potatoes to dressing, stirrig gently to coat evenly; cool.
Add beef, onion and parsley; toss gently to combine.
Serve immediately or cover and chill.
To serve, arrange on plate with salad greens.
