Ingredients

 Garlic1 Clove (5gm), minced (TURKEY:)
 Dijon Mustard1 Teaspoon (TURKEY:)
 Salt1/4 Teaspoon (TURKEY:)
  black pepper1 (TURKEY:)
 4 turkey breast cutlets
 Cherry tomatoes1 Pint, halved (SALAD:)
 2 cups cooked cut corn, fresh, frozen or canned
 Scallions1/4 Cup (16 tbs), thinly sliced (SALAD:)
 Olive oil1 Tablespoon (SALAD:)
 Lemon juice1 (SALAD:)
 Parsley1/4 Cup (16 tbs), coarsely chopped (SALAD:)
 Lettuce leaves
 Salt To Taste
 Pepper To Taste

Directions

TO MAKE TURKEY: Season cutlets with garlic, mustard, salt and pepper.
Grill about 4 minutes per side or until cooked through, or brush and saute in non-stick pan 2-3 minutes per side.
TO MAKE SALAD: Toss all ingredients in a bowl.
To serve, line 4 plates with lettuce leaves, spoon on salad and top with grilled turkey cutlets.
