Grilled Swordfish With Green Beans And New Potatoes Recipe
Ingredients
| 4 small red-skinned new potatoes, scrubbed | ||
| 1 pound young tender green beans, ends trimmed | ||
| Swordfish | 1 pound | |
| Lemon wedges | 4 (GARNISH) | |
| Parsley sprigs | ||
Directions
TO PREPARE THE POTATOES: Put them in a saucepan and add cold water to cover by I inch.
Bring to a rolling boil, lower the flame, and cook at a rapid simmer for 18 to 20 minutes, or until fork-tender.
TO PREPARE THE GREEN BEANS: Fill a bowl with cold water.
Bring 1 quart of water to a boil in a saucepan, add the green beans, and cook for 2 to 3 minutes.
Dram and plunge into the cold water to stop the cooking and preserve the color, then drain again.
TO PREPARE THE SWORDFISH: Preheat the broiler.
Broil the swordfish 6 inches from the flame for 5 minutes on each side.
Check to see that the fish does not dry out.
