| Sweet potatoes | 2 Pound, sliced into 1/4 of an inch | |
| Vegetable oil | 2 Tablespoon | |
| Olive oil | 1⁄4 Cup (4 tbs) | |
| Salt | 1 Teaspoon | |
| Cumin | 1 Teaspoon, ground | |
| Nutmeg | 1⁄2 Teaspoon, freshly grated | |
| Lime juice | 2 Teaspoon | |
| Scallions | 4 Small, chopped | |
| Fresh parsley/Cilantro | 1⁄4 Cup (4 tbs), finely chopped | |
| Lime juice | 1 Tablepsoon | |
| Black pepper | To Taste | |
| Pecans | 50 Gram, toasted |
Directions
GETTING READY
1. Pre-heat the grill at 450F.
2. Part cook the sweet potatoes for 4 minutes.
MAKING
3. Brush the sweet potatoes with vegetable oil and put it on the grill.
4. In a small jar with a lid, pour olive oil, season with salt, lime juice, ground cumin, and nutmeg. Cover the top with a lid and give it a good shake.
5. Place the grilled sweet potatoes in a dish, top it with the parsley and scallions and pour the dressing all over it.
SERVING
6. Squeeze some fresh lime juice, season with some peeper and top it up with some toasted pecans right before serving this sweet potato salad.
