Grilled Summer Vegetables Recipe

I have made something close to this Grilled Summer Vegetables before and hence had expected this Grilled Summer Vegetables to turn out this nice.

Ingredients

 
3 tbs (45 ml) olive oil
 
3 tbs (45 ml) Vinegar, such as French Tarragon, Purple Ruffles Basil, Lemon Basil, Chive Blossom or Piccolo Basil
 
2 Japanese eggplants, halved lengthwise
 
2 zucchini, halved lengthwise
 
2 yellow squash, halved lengthwise
 
4 slices red onion, 1/2-inch thick
 
1 sweet red pepper, quartered and seeded

Directions

Whisk oil into vinegar.
Brush vegetables with vinaigrette.
Prepare barbecue at medium-high heat.
Grill vegetables until tender, about 4 minutes per side.
