Drain fish well and pat dry; using heavy knife cut each shark steak into 2 pieces.
A wooden mallet is useful to pound knife through bone.
Place butter, ginger, garlic, chives, sugar, lime juice and Worcestershire in small saucepan; heat until melted.
Brush butter mixture over fish.
Heat oil in large grill or frying pan.
Add fish and cook 10 to 12 minutes over medium heat.
Season during cooking and turn pieces over 2 to 3 times.
If desired, garnish servings with saudeed apples and steamed green beans.
