Grilled Salmon With Cucumber Sauce Recipe
Ingredients
| Frozen salmon | 2 | |
| 1/4 cup finely chopped seeded cucumber | ||
| 3 tablespoons plain non-fat yogurt | ||
| 1 tablespoon non-fat mayonnaise or salad dressing | ||
| Snipped chives | 1 Teaspoon | |
| Salt | 1 Dash | |
| Pepper | 1 Dash | |
| Non-stick spray coating | ||
| Lemon juice | 1 Tablespoon | |
Directions
Thaw fish, if frozen.
In a small mixing bowl stir together the cucumber, yogurt, mayonnaise or salad dressing, chives, salt and pepper.
Cover and chill in the refrigerator till needed.To grill, spray a cold grill rack with non-stick coating.
Place fish on the rack.
Brush fish with some of the lemon juice.
Grill fish on an uncovered grill directly over medium hot coals for 4-minutes: Using a wide spatula, carefully turn the fish over.
Brush with the remaining lemon juice and grill for 4 to 7 minutes more or just till fish begins to flake easily.
To broil, spray the unheated rack of a broiler pan with nonstick coating.
Place fish on the rack.
Brush fish with some of the lemon juice.
Broil 4 inches from the heat for 4 minutes.
Turn fish over and brush with the remaining lemon juice.
Broil for 4 to 7 minutes more or just till fish begins to flake easily.
