Grilled Salmon With Broccoli Recipe

Wash the broccoli, shorten the stems somewhat, peel and cut up to the florets.
Bring the water to a boil with 1 tsp.
salt, add the broccoli, cover and simmer 15 minutes.
In a saucepan melt the butter.
In another saucepan whisk the egg yolks with 1 tablespoon water, the remaining lemon juice, the pepper, cayenne pepper and a generous pinch of salt.
Place in a pan of hot water and whisk until thick and creamy.
Remove the pan from the water.
Drip and then spoon in the melted butter while whisking vigorously.
Season the sauce with salt and pepper if desired, cover and keep warm.
Preheat the pan or electric grill.
Pat the salmon steaks dry, brush with the oil and grill or fry 4 to 5 minutes on each side, then sprinkle with the remaining salt.
Drain the broccoli.
Arrange on a platter with the salmon steaks.
