Grilled Salmon Steaks With Watercress Sauce Recipe
Grilled salmon steaks with watercress sauce is a simple yet elegant seafood recipe. Made with an Italian dressing and watercress marinade, the salmon steaks are grill cooked with frequent bastings. Cooked to doneness, the fish steaks are served with a prepared watercress marinade and vermouth sauce made with heavy cream.
Ingredients
1 cup (8 ounces) Italian Dressing
1/2 cup chopped watercress
4 salmon, tuna or swordfish steaks, 1 inch thick
1/2 cup whipping or heavy cream
2 tablespoons dry vermouth
Pinch of sugar (optional)
Directions
In large shallow baking dish, combine Italian dressing with watercress.
Add fish and turn to coat.
Cover and marinate in refrigerator, turning fish occasionally, at least 4 hours.
Remove fish, reserving marinade.
Grill or broil, turning once and basting with reserved marinade, until fish flakes.
Meanwhile, in small saucepan, bring 1/4 cup reserved marinade to a boil, then simmer uncovered 5 minutes.
Stir in cream, vermouth and sugar.
Cook, stirring occasionally, 3 minutes or until slightly thickened.
Add fish and turn to coat.
