Grilled Salmon Sausage On Focaccia With Sauteed Peppers Recipe

Ingredients

 
1 Plain Salmon Sausage
 
1/4 cup (60 ml) balsamic vinaigrette
 
1/2 cup (120 ml) combination onion, red and green peppers, julienned
 
1 tsp (5 ml) garlic, minced
 
1 tbs (15 ml) fresh basil, julienned
 
4 leaves radicchio
 
2 1/2 oz (75 g) soft low-fat mozzarella, sliced 1/4-inch thick
 
2 slices focaccia bread, 1-inch thick

Directions

Quickly grill sausage 3-8 minutes, basting frequently with vinaigrette, until lightly browned and hot.
In skillet, saute onions, peppers, garlic and basil in remaining vinaigrette for 1-2 minutes.
Add radicchio, heat for 30 seconds stirring quickly.
Remove radicchio, add mozzarella to mixture and melt under broiler.
Arrange radicchio and salmon sausage on toasted focaccia.
Top with the sauteed vegetables/melted cheese mixture.
Great with mustard.
