| 2 Rock Cornish game hens, halved | ||
| Olive oil | 2 Tablespoon | |
| 1/2 cup orange juice or apple juice | ||
| Lemon juice | 1/2 Cup (16 tbs) | |
| Water | 1/4 Cup (16 tbs) | |
| Onions | 1/3 Cup (16 tbs), chopped | |
| Rosemary | 1/2 Teaspoon, crumbled | |
| Thyme | 1/2 Teaspoon | |
| Garlic | 1 Clove (5gm) | |
| Parsley | 1 Bunch (100gm), garnish | |
Directions
Place the game hens in a shallow roasting pan.
Combine the oil, juices, water, onions, rosemary, and thyme in a small bowl and add the garlic by pushing it through a garlic press into the bowl.
Pour over the hens.
Cover and marinate in the refrigerator for 8 to 12 hours, turning once or twice.
Drain the hens and place on a grill or under a broiler, keeping the meat far enough away that it will cook slowly and not burn.
When the meat is tender and cooked through, about 40 minutes, remove skin and place on a large serving plate garnished liberally with parsley, if desired.
