 Allow 2 to 3 small heads radicchio per person, or 1 large head
 Unsalted butter1/2 pound, melted
 2 to 3 sprigs fresh sage, or 1 tablespoon dried
  black pepper1

Directions

1. Leave small heads of radicchio whole; quarter large heads.
2. Melt the butter in a saucepan and add the sage and pepper.
3. Dip the radicchio into the melted butter, then grill it over hot coals until tender and slightly blackened.
