Directions

MAKING
1. In a large nonmetallic bowl, combine garlic, olive oil, vinegar, thyme and pepper and whisk them well to blend
2. Rinse eggplants, pat dry and combine with leeks, zucchinis and red bell peppers in a large shallow nonmetallic dish
3. Pour the marinade over the vegetables, tightly cover the dish and refrigerate for an hour
4. Heat the broiler, drain the marinade from vegetables adn place them on the prepared broiler, cooking till they are tender; turn them often to cook evenly

5. Serve as appropriate
