Grilled Lemon Sage Chicken Recipe
Ingredients
| 6 boneless chicken breast fillets skinned, all visible fat removed | ||
| Olive oil | 1/2 Cup (16 tbs) | |
| Lemon juice | 1/3 Cup (16 tbs) | |
| Rosemary | 1 Tablespoon, chopped | |
| Sage leaves | 1/4 Cup (16 tbs), chopped | |
| Salt | 1/2 Teaspoon | |
| 1 teaspoon black peppercorns, cracked | ||
| 2 or 3 cloves garlic, minced | ||
| 1 teaspoon grated lemon rind | ||
| Lemon slices | 6 , cut in half (GARNISH) | |
| Sage leaves | 4 (GARNISH) | |
Directions
Rinse chicken and pat dry.
Place pieces between two sheets of plastic wrap and flatten to 1/8 inch thickness with a mallet.
Arrange chicken in a glass or enamel baking dish.
In a small bowl, combine oil, lemon juice, herbs, salt, pepper, garlic and lemon rind.
Mix well.
Pour over chicken and turn pieces to coat evenly.
Cover and refrigerate for several hours or overnight, turning pieces occasionally.
Grill marinated chicken over hot coals.
