Ingredients

 6 boneless chicken breast fillets skinned, all visible fat removed
 Olive oil1/2 Cup (16 tbs)
 Lemon juice1/3 Cup (16 tbs)
 Rosemary1 Tablespoon, chopped
 Sage leaves1/4 Cup (16 tbs), chopped
 Salt1/2 Teaspoon
 1 teaspoon black peppercorns, cracked
 2 or 3 cloves garlic, minced
 1 teaspoon grated lemon rind
 Lemon slices6 , cut in half (GARNISH)
 Sage leaves4 (GARNISH)

Directions

Rinse chicken and pat dry.
Place pieces between two sheets of plastic wrap and flatten to 1/8 inch thickness with a mallet.
Arrange chicken in a glass or enamel baking dish.
In a small bowl, combine oil, lemon juice, herbs, salt, pepper, garlic and lemon rind.
Mix well.
Pour over chicken and turn pieces to coat evenly.
Cover and refrigerate for several hours or overnight, turning pieces occasionally.
Grill marinated chicken over hot coals.
