Kebab is a generic term used to refer to a number of meat dishes, ideally lamb dishes, from the Persian cuisine.
A kebab is traditionally made of lamb meat, but beef, pork, chicken , seafood and fish, and goat meat are also being used for the purpose. The meat is prepared by seasoning it with spices and herbs. In the olden times kebabs were meatballs made of pounded or ground meat of lamb or chicken. Kebabs were believed to have been conceptualized by the medieval Iranian soldiers who first started roasting small pieces of meat by using their swords as skewers.

Ingredients
1 pound lamb without bones
4 small yellow onions, quartered
8 cherry tomatoes
4 bay leaves
Marinade:
1/4th cup oil
2 teaspoons soy sauce
Salt as per taste
6 black peppercorns, crushed
1 teaspoon rosemary
1 tablespoon lemon juice
Directions
GETTING READY
1. In a bowl mix the ingredients of the marinade.
2. Cut the lamb into bite sized pieces and add to the bowl.
3. Marinade the meat for 1 hr
MAKING
4. Take 4 skewers and lightly oil them.
5. Starting with onions, alternately arrange onion, meat and cherry tomatoes on each skewers. Finish off with a bay leaf.
6.Grill over fire for about 10-15 minutes. Turn often and brush with marinade.
SERVING
7.Once the meat is tender, immediately remove the meat and vegetables on a serving platter and serve with a spicy relish.Bay leaves can be discarded.
TIP
You may choose to make the kebabs more attractive by using colored bell peppers along with tomatoes and onions. This also enhances the taste of the kebabs.

I dont have a coal barbecue and though the kebabs turn out tender, they don't have the lovely char grilled flavor. How can I get that flavor without a coal grill?
