Recipe Story

I make this Kebab often for Eid celebrations. Since most traditional Eid dishes use the same spices I make these fusion Grilled Lamb Kebabs to get a different flavor in the menu. You should try this recipe, I am sure it will be appreciated.

Ingredients

 
1 pound lamb without bones
 
4 small yellow onions, quartered
 
8 cherry tomatoes
 
4 bay leaves
 
Marinade:
 
1/4th cup oil
 
2 teaspoons soy sauce
 
Salt as per taste
 
6 black peppercorns, crushed
 
1 teaspoon rosemary
 
1 tablespoon lemon juice

Directions

GETTING READY
1. In a bowl mix the ingredients of the marinade.
2. Cut the lamb into bite sized pieces and add to the bowl.
3. Marinade the meat for 1 hr

MAKING
4. Take 4 skewers and lightly oil them.
5. Starting with onions, alternately arrange onion, meat and cherry tomatoes on each skewers. Finish off with a bay leaf.
6.Grill over fire for about 10-15 minutes. Turn often and brush with marinade.

SERVING
7.Once the meat is tender, immediately remove the meat and vegetables on a serving platter and serve with a spicy relish.Bay leaves can be discarded.

TIP
You may choose to make the kebabs more attractive by using colored bell peppers along with tomatoes and onions. This also enhances the taste of the kebabs.

I dont have a coal barbecue and though the kebabs turn out tender, they don't have the lovely char grilled flavor. How can I get that flavor without a coal grill?
