Grilled Lamb Chops Caponata Recipe

| 4 (6-ounce) lean lamb loin chops (1-inch thick) | ||

Directions
Trim fat from chops.
Rub with salt and pepper.
Cover; refrigerate 30 minutes.
Coat grill rack with cooking spray,- place on grill over medium-hot coals.
Place chops on rack; grill 7 minutes on each side or to desired degree of doneness.
