Grilled Ginger Salmon Fillets Recipe
Ingredients
| Lime juice | 3 Tablespoon | |
| 2 tablespoons reduced-calorie margarine, melted | ||
| 1 tablespoon peeled, minced gingeroot | ||
| Curry powder | 1/8 Teaspoon | |
| Vegetable cooking spray | ||
| Salmon fillets | 4 | |
| Parsley | 2 Teaspoon, chopped | |
Directions
Combine first 4 ingredients in a small bowl; stir well.
Set aside.
Coat a large piece of heavy-duty aluminum foil with cooking spray.
Place foil on grill rack over medium-hot coals (350° to 400°).
Puncture foil several times for ventilation.
Place fillets on foil; grill, covered, 6 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with lime mixture.
Transfer to a serving platter, and sprinkle with parsley.
Garnish with lime wedges, if desired.
