Grilled Fillets Recipe
Ingredients
| 1-1/2 lbs. bluefish, mullet or mackerel fillets | ||
| Vegetable oil | ||
| Lime or lemon wedges | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Preheat grill; grease rack or a hinged wire basket.
Rinse fillets; pat dry with paper towels.
Cut rinsed fillets into 4 serving pieces.
Season with salt and pepper.
Generously rub seasoned fillets with oil.
To grill fillets on rack, place oiled fish on greased rack, skin-side up, 4 to 6 inches above hot coals or high heat.
To grill in hinged wire basket, place oiled fish in greased basket.
Basket has legs; therefore, regular wire rack may be removed from grill.
Place basket so fillets are 4 to 6 inches above hot coals or high heat.
Grill fish on rack or in basket 3 to 4 minutes.
Turn; grill 2 to 4 minutes longer or until fish tests done.
Place grilled fillets on a platter.
