Grilled Eggplant With Marinara Sauce Recipe
Ingredients
| Salt | 1/2 Cup (16 tbs) | |
| Mushrooms | 2 Tablespoon, chopped | |
| Green pepper | 1 Tablespoon, chopped | |
| Lemon juice | 1 Teaspoon | |
| Onion | 3/4 Teaspoon, minced | |
| Dried oregano | 1/4 Teaspoon | |
| Dried basil | 1/4 Teaspoon | |
| Dash of garlic powder | ||
| Ground red pepper | 1 Dash | |
| Eggplant | 1 Medium | |
| Vegetable oil | 2 Tablespoon | |
Directions
Combine first 9 ingredients in a small saucepan, simmer, uncovered, 20 minutes, stirring occasionally.
Set aside and keep warm.
Cut eggplant into twelve 1/2-inch-thick slices.
Brush slices with oil on both sides.
Grill slices over medium coals 2 minutes on each side or until crisp tender.
Transfer to a serving platter,top with sauce.
Garnish with fresh basil,
