Grilled Courgettes Recipe

1 tablespoon butter
8 courgettes, trimmed, cleaned and blanched
2 garlic cloves, crushed
2 teaspoons sugar
1 teaspoon salt
1 tablespoon chopped fresh dill or
1 1/2 teaspoons dried dill
1 medium sized onion, sliced and pushed out into rings
3 oz. Parmesan cheese, grated
Directions
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Grease a shallow flameproof baking dish with the tablespoon of butter.
With a sharp knife, slice the courgettes [zucchini] in half, lengthways, and arrange them in the bottom of the baking dish, skin side down.
Sprinkle them with the garlic, sugar, salt and dill and arrange the onion rings over the top.
Spread the grated cheese on top of the mixture and bake in the upper part of the oven for 15 minutes.
Preheat the grill [broiler] to moderately high.
Remove the courgettes [zucchini] from the oven and place them under the grill [broiler] for 4 minutes, or until the cheese is bubbly and brown.
