Grilled Cornish Game Hens Recipe
Grilled cornish game hens are simple and stunningly easy recipe. Marinated with the sharp flavor of lemon juice with crushed peppercorns and salt, the hens are grill cooked over charcoal with frequent basting of the lemon marinade. A simple fare for camp meals or picnics!
Ingredients
2 Cornish game hens (1 to 1 1/2 pounds each)
3 tablespoons olive or vegetable oil
1/3 cup lemon juice
1 tablespoon black peppercorns, coarsely crushed
1/2 teaspoon salt
Sprig fresh rosemary
Directions
Split hens lengthwise.
Rinse under cold running water; pat dry with paper toweling.
Place hens in large plastic bag; set in bowl.
In small bowl, combine oil, lemon juice, peppercorns and salt.
Pour marinade over hens in bag.
Close bag securely and refrigerate several hours or overnight, turning hens occasionally to coat with marinade.
Arrange medium-hot Charcoal Briquets around drip pan.
Just before grilling, add rosemary sprig to coals.
Drain hens; reserve marinade.
Place hens, skin-side up, over drip pan.
Cover grill and cook 45 minutes or until thigh moves easily and juices run clear.
Baste with marinade occasionally.
Garnish with fresh rosemary, if desired.
