Ingredients

 
1/2 lb (230 g) large raw shrimp, shelled and deveined, or scallops
 
1/2 cup (120 ml) water
 
1/4 cup (60 ml) lime juice
 
1 tsp (5 ml) sesame oil or vegetable oil
 
2 tbs (30 ml) minced green onion
 
2 tbs (30 ml) minced Fresh Cilantro
 
1 Dried Habanero Chile, rehydrated and very finely minced
 
1 clove garlic, minced
 
2 cups (480 ml) shredded green or yellow zucchini
 
2 cups (480 ml) shredded carrot

Directions

Place shrimp or scallops in a nonmetal dish.
Stir together water, lime juice, oil, onion, cilantro, habanero and garlic; pour over shrimp.
Cover and chill for 2-6 hours.
