 Penne12 Ounce, dried
 Chicken breast halves- 2, (8 ounce), boned and skinned
 Shiitake or other wild mushrooms- 12
 Red onion1
 Extra-virgin oil- 3 tablespoons
 Kosher salt- a good pinch
 Black pepper1 To taste
 Garlic2 Teaspoon, minced
 Large ripe tomato- 1, peeled, seeded and chopped
 Snow peas16
 Marjoram1 1/2 Teaspoon, chopped
 Parsley1 Tablespoon, chopped
 Homemade chicken broth or low sodium canned broth- 1 cup

Directions

GETTING READY
1. Start by Preparing a charcoal, wood, or gas grill or preheat the broiler

MAKING
2. In a large saucepan, pour water, and boil it, then add
the penne and cook for 10 to 12 minutes till it turns firm, later drain and set aside
3. Lay the chicken breasts, mushrooms, and onion slices and brush with olive oil, sprinkle with salt and pepper
4. On the coals, grill the chicken breasts for about 3 minutes on each side, also grill the mushrooms for 1 minute, and add the onion slices for 3 minutes and grill to a side
5. Take the vegetables and set them aside, to cool to room temperature.
6. Take a sharp knife, use it to cut the chicken breasts and mushrooms into thin strips, take the onion ring and cut each ring in half
7. In a large skillet, heat the remaining olive oil, then
add garlic, chicken, mushrooms, onions, chopped tomato, snow peas, and herbs to it, saute all the ingredeints in the skillet for 1 minute over medium heat, later add pasta and chicken broth, and boil it
8. In soup bowl, pour the mixture

SERVING
9. Serve with a sauce of your choice, or with salads, cooked vegetables or rice
