Grilled Caramel Banana Sundaes Recipe

 Sugar1/2 Cup (16 tbs)
 Water2 Tablespoon
 Butter1 Tablespoon
 1/3 cup evaporated fat-free milk
 Vanilla extract1/4 Teaspoon
 Salt1/8 Teaspoon
 Bananas2 Large
 Sugar2 Tablespoon
 Ground cinnamon1/4 Teaspoon
 1/4 cup pineapple-orange juice
 Cooking spray
 1 cup vanilla low-fat ice cream

Directions

1. Combine 1/2 cup sugar and water in a heavy saucepan; cook over medium heat 6 minutes or until sugar dissolves. Cover, increase heat to medium-high, and boil 1 minute. (Crystals on side of pan will dissolve.) Uncover; boil 5 minutes or until amber or golden (do not stir).
2. Remove from heat; let stand 1 minute. Add butter; stir until melted. Whisk in milk, stirring constantly (mixture will bubble). Stir in vanilla and salt. Pour sauce into a bowl; set aside.
3. Prepare grill.
4. Slice each banana in half lengthwise then cut each piece in half crosswise. Combine 2 tablespoons sugar and cinnamon. Dip banana pieces in juice; coat with sugar mixture. Arrange banana pieces in a grill basket coated with cooking spray. Place grill basket on grill rack; grill 3 to 4 minutes on each side or until bananas are browned. 5. Place 2 banana slices in each of 4 bowls; top with 1/4 cup vanilla ice cream. Drizzle with 3 tablespoons caramel sauce.
