Homemade baking mix is as versatile as your imagination. You can tailor-make the mix according to your tastes. This mix can be used to make biscuits, pancakes, coffee cakes, cookies, layer cakes, shortcakes, muffins, tube cakes and more. Happy baking!
Ingredients
6 1/2 cups (2 pounds) unbleached all-purpose flour
1 cup instant nonfat dry milk
1 tablespoon table salt
3 tablespoons baking powder
2 cups vegetable shortening, trans-fat free
Directions
1) Put the flour into a large bowl. Add the dry milk, salt and baking powder and whisk to combine thoroughly. Cut cold shortening into 1/2-inch-thick slices and add to bowl.
2) Cut the shortening into the dry ingredients with a pastry blender-use a chopping motion-until particles are very small (about 1/8-inch) and evenly distributed. This takes several minutes.
