Greens in Brown Butter Recipe
Ingredients
| Fresh spinach or other greens turnips or beets - 3 pounds , well washed | ||
| Butter - 6 to 8 tablespoons | ||
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
Directions
MAKING
1 Leave the stems, if the leaves are small, if large, remove them.
2 In a large pot of boiling water,put the greens.
3 Boil for 2 minutes and about, 3 to 5 minutes longer for older, larger greens.
4 Drain well.
5 Refresh the leaves by placing under running cold water.
6 Drain thoroughly and squeeze dry.
7 In a large frying pan, melt the butter.
8 When the butter turns golden brown, add in the drained greens.
9 Turn to coat and heat throughly.
10 Season with salt and pepper.
SERVING
11 Serve hot.
