Greengage Fool Recipe
Ingredients
450 g (1 lb) ripe fresh greengages
juice of 1 orange
150 ml (1/4 pint) skimmed milk
15 g (1/2 oz) corn flour
artificial sweetener, to taste
4 tablespoons plain unsweetened yogurt
halved orange slices to garnish
Directions
1 Put the greengages into a pan with the orange juice; cover the pan and simmer gently until the fruit is just tender. Remove all the stones and cool.
2. Blend 2 tablespoons of the milk with the cornflour; heat the remaining milk in a pan and then stir into the cornflour paste. Return to the saucepan and stir over a gentle heat until the sauce has thickened. Add a little sweetener to taste.
3. Cool the sauce and then mix it with the cooled greengages; stir in the yogurt.
4. Spoon into stemmed glass dishes and chill for 2 hours before serving.
5. Garnish each portion with a halved orange slice.
