2 large, dark green cucumbers
 
2 cups chicken stock
 
30g butter
 
1/2 tablespoons flour
 
1 cup warm milk
 
1 teaspoon chopped fresh dill or 1/4 teaspoon dried
 
Salt and freshly ground pepper
 
1/4up cream
 
Snipped fresh dill or chives

Directions

Peel cucumbers thinly, so that the green beneath the skin is left on. Halve lengthwise, scoop out seeds, and cut into pieces. Whirl in a food processor or blender until smooth, adding a little stock to help the process if necessary. Pour into a jug, add remaining stock, and set aside. Melt butter in a large saucepan, stir in flour, and cook gently for 1 minute. Remove from heat, cool a little, and stir in milk. Blend smoothly together, return to heat and stir until boiling. Add cucumber mixture, dill and salt and pepper to taste. Stir in cream. Reheat gently until piping hot. Serve in heated bowls, garnished with dill or chives
